Christmas Mince Pies

Every Christmas it is tradition for home made Christmas mince pies. This is a family favourite and one can never make enough. We always give them a special South African Christmas kiss, and use Klipdrift brandy. I hope you enjoy them as much as we do; they are fresh, rich and boozy just as Christmas should be.

INGREDIENTS

Makes 48 – even more.

 Fruit Mince

  • 500g mixed dried fruit (raisins, sultanas, currants)
  • 4 apples, peeled and grated
  • 100g red glazed cherries
  • 1,5 cups of sticky brown sugar
  • 1 tbls of all spice (nutmeg, ground cloves)
  • 400g orange marmalade
  • 1 cup Klipdrift brandy
  • 100g flaked almonds
  • flour
  • 1 egg
  • 800g puff pastry
  • Icing sugar

METHOD

  1. Mix together all the fruit mince ingredients. Leave this to stand over night as to let the fruit mince absorb all the brandy.
  2. Allow time for your puff pastry to thaw and defrost
  3. Preheat the oven to 1800 C, and then grease your cupcake trays. Leave aside.
  4. Roll out your pastry and remember to not make it too thin, as you want the pastry to be thick and delicious once it starts baking in the oven.
  5. Find a cookie cutter to cut circles 4,5cm in diameter (if you don’t have a cookie cutter then make use of a glass or cup). Use a sprinkle of flour to prevent the pastry from sticking to any surfaces). Cut out 48 circles, re-rolling the pastry when necessary.
  6. Once the bottoms are cut, line the trays with the bottoms of your mince pies and gently press into the moulds.
  7. Re-roll more pastry and cut out 48 stars (these will be the tops).
  8. Use a heaped teaspoon, and dollop your fruit mince into each mould.
  9. Then place your star lightly on the mince meat.
  10. Beat an egg in a cup and paint the tops of your stars with the egg, this will ensure that your mince pies go golden brown in the oven.
  11. Place in the oven, for about 15mins, keep an eye on them as they don’t take long to cook.
  12. As soon as they cooked take them out the oven and get them out of those trays, as it’s easier to get them out while they are hot. Leave to cool.
  13. Dust some icing sugar over to finish, this can be done through a sieve or tea strainer.
